Strawberry Lemon Pops

I posted yesterday about Strawberry Mango Lemonade.  Today I'm bringing you another little summer treat idea.  I recently made some fruit pops because I saw some freeze pop molds at the dollar store and figured I could give it a try for only $1.  It's not like I wouldn't be getting any great use out of it.  We have hot summers here.

So I took to my trusty food processor (because my trusty blender isn't so trusty anymore now that it went ka-put).  I used my combination of strawberries and lemons again.




I chopped up a handful of strawberries, added some freshly squeezed lemon juice (one lemon is enough), and added a little water and honey all to my food processor.  I blended it all until it was pureed smoothly.  I then poured this mixture into my freeze pop mold, placed in the sticks, and froze them for hours.

These things are soooooo good!  All natural and super easy to make.  I think I will try adding fruit juice the next time I make fruit pops.  I'm definitely going to see how many different types of pops I can come up with before the end of summer!





This kiddie likes and so does her mama!!!  She couldn't wait to get out of school to have one.  I finally let her enjoy one, and she was so excited.

Surf-n-Turf Chowder

I felt compelled to cook today after my work-out. I really wanted to go out to eat but coersed myself to go home and make something quick, light, and healthy. So I grabbed a few ingredients that were already in the fridge and whipped up a chicken and shrimp chowder.

Ingredients
-8 oz package of cream cheese
-1 cup of milk
-1/2 cup water
-1/4 onion, chopped
-2 cloves garlic, chopped
-1/4 cup cooked chicken, shredded
-1/4 cup raw shrimp, peeled, deveined, & chopped
-1 cup frozen broccoli
-1 small can mushrooms (optional)
- Old Bay seasoning, lemon pepper, paprika, and black pepper (all to taste)
-pat of butter

Directions
Sprinkle seasonings on chicken, shrimp, garlic and onions. Sauté in pot over butter on medium heat. Cook until shrimp is done. Add milk and water to mixture then cream cheese, stirring occassionally. Fold in broccoli and mushrooms. Turn down heat to low-medium and let simmer for about 10 more minutes. Eat and enjoy!

This is such a quick little meal that can be cranked out at anytime and is easily adaptable. Add potatoes or take away shrimp. Customize it however your family likes it. To beef up chowder a little more, I always like to make a pot of linguine to spoon the chowder over.

Easy Spinach, Mushroom, Bacon Quiche

I'm not much of a cooker. What I mean by that is I don't really like to cook much. It's not that I can't so much as it I'd that I don't really feel like doing it. It's mostly because I hate grocery shopping. But I've got a simple recipe that utilizes most staple foods that we normally carry in our home. Aren't you excited?!






I feel like this is a great recipe for, of course, brunch, light dinner, or a great side dish for holidays. And it is totally adaptable. You can substitute anything for the spinach, mushrooms, and bacon.

Ingredients
4 eggs
1 cup milk or cream
1/2 cup mayo
2 Tbsp flour
1/2 onion, diced
Salt and garlic powder, to taste
4 oz shredded cheese
Fresh spinach, chopped
7-9 strips of bacon
Small can of mushrooms
1 (9-inch) pie shell


Directions
Preheat the oven to 350°F.
Mix eggs, milk, mayo, and flour in a medium mixing bowl.
Fold in remaining ingredients.
Pour into pie crust.
Bake for 45 minutes or until the top is golden brown, making sure to poke a toothpick through the center to make sure it's cooked all the way through.
